The downtown Aurora area is in for a treat. Gillerson’s Grubbery will be opening Tuesday, October 6th. (20

A comfort food concept with a focus on locally sourced ingredients, opening in the 33west space formally occupied by accomplished Chef Amaury Rosado. The new owners, both chefs with roots deeply planted in the Suburban dining scene, Dan Emerson and Matt Gillie are poised to have one of the most popular places in Aurora.

The menu is well thought out and fun. I had the chance to stop in for a preview and was really impressed. The remodeled space is gorgeous, with rich wood tones and exposed brick walls accented with bright green panels and murals by local artists. The bar, outfitted in repurposed wood is definitely going to be a popular gathering space for locals to grab a quick bite and a good cocktail, glass of wine or beer.

What To Try:

A Burger – Any burger, they use the same farm as the world famous Au Cheval

Oodles of Noodles (Salad) – This ain’t Insta-Ramen.

Are You a Fungi? – Cremini mushrooms stuffed with Chorizo…no more words necessary

A Cocktail, Glass of Wine, or Beer – They have a great variety with plans to rotate.

There are also lots of plans for menu expansion, including brunch.

Gillerson’s Grubbery is bringing the Gastropub experience to Downtown Aurora.
