Recently I had the pleasure of speaking with Chef and TV Host Chris Koetke of the Live Well Network about the James Beard Awards. Koetke is a veteran in the restaurant industry, he began cooking professionally in 1982, and has worked in some of the world’s finest kitchens, including French restaurants Pavilion Elysees, Pierre Gagnaire, Taillevent, and Pierre Orsi. He is a certified executive chef and certified culinary educator by the American Culinary Federation. As the Vice President of the Kendall College School of Culinary Arts chef Koetke is very involved in studying food trends and he discusses some of the trends he is seeing in food with us.
